
Dijko Ovens & Machines will exhibite the successfull Tunnel Rack Baking System and Vari-Jet water scoring machine at the Bakery China 2010 which will be held from 12-15 May in Shanghai, China. This fully or semi automatic system can consist of modules for proofing, scoring, baking, cooling, deep-cooling and freezing. Trays can be automatically loaded and un-loaded from the racks. This can be done with a robot or stacker/pusher. The racks are automatically transported through the system. Benefits are the small footprint and production flexibility, with an excellent result.

This fully or semi automatic system can consist of modules for proofing, scoring, baking, cooling, deep-cooling and freezing. Since the actual system can be 40 mtrs or longer, a scale model will be used to show all possible sections of the system. Trays can be automatically loaded and un-loaded from the racks. This can be done with a robot or stacker/pusher. The racks are automatically transported through the system. Benefits are the small footprint and production flexibility, with an excellent result.

Dijko Ovens & Machines has recently introduced a unique concept as an addition on the Tunnel Rack Oven System. Dijko was given the question by customers if it was possible to implement a scoring system in between the proofing and baking. After carefully analyzing different cutting techniques Dijko came to the conclusion that scoring with water has numerous benefits over cutting with blades. Blades have a tendency to stick to the product, they need time consuming re-adjusting when product height varies, they often need to be sharpened, replaced and lubricated. The Dijko water scoring machine can be freely programmed in a 2D plane. Which makes it possible to produce any patterns needed, even circles can be made! By implementing this scoring machine in our automated Tunnel Rack Oven system, it's possible to fully automate the production of French baguettes and other products that need scoring from start to fnish in the Dijko system. The water scoring machine is designed to be used in our automated lines, where racks are positioned automatically in front of the scoring device. However, it can also be implemented in smaller bakeries where racks are placed manually in front of the machine, the water scoring machine is then custom made according to the used racks by the customer.
